Method
Prepare Grits
Add Cheese
Once the grits are cooked, remove from heat and stir in 1 cup of shredded cheddar cheese until melted and well combined.
Cook Sausage
Brown the Sausage
In a skillet over medium heat, crumble and cook 1 lb of country pork sausage until browned and fully cooked, about 8-10 minutes. Drain excess fat if necessary.
Scramble Eggs
Prepare Eggs
In a bowl, whisk together 4 large eggs, 2 tbs of milk, and salt and black pepper to taste.
Cook the Eggs
In a non-stick skillet over medium-low heat, pour in the egg mixture. Stir gently with a spatula until the eggs are just set and fluffy, about 3-4 minutes.

Combine Ingredients
In serving bowls, layer the cheesy grits, followed by the cooked sausage, scrambled eggs, and top with 1 cup of shredded smoked gouda and 1 cup of crispy fried onions.
