Method
Preparing the Turkey
Preheat the Oven
Preheat your oven to 325°F (165°C).
Prepare the Turkey
Remove the turkey from the refrigerator and let it sit at room temperature for about 30 minutes before cooking.
Season the Turkey
In a bowl, mix together the salt, black pepper, olive oil, rosemary, thyme, sage, minced garlic, lemon zest, and lemon juice. Rub this mixture all over the turkey, including under the skin for maximum flavor.
Stuff the Turkey
Stuff the cavity of the turkey with the quartered onion to add flavor.
Rest the Turkey
Once done, remove the turkey from the oven and let it rest for at least 20-30 minutes before carving.
Making the Gravy
Collect the Drippings
After the turkey has rested, pour the drippings from the roasting pan into a measuring cup. Skim off excess fat if necessary.
Make a Roux
In a saucepan over medium heat, add the all-purpose flour and cook for about 2 minutes, stirring constantly until lightly browned.
Add Broth and Drippings
Slowly whisk in the chicken broth and turkey drippings into the roux. Continue to whisk until smooth.
Simmer the Gravy
Bring the mixture to a simmer and cook for about 5-10 minutes until thickened. Season with salt, black pepper, and fresh thyme to taste.
