Method
Syrup Preparation
- 1
Make Huckleberry Syrup
In a medium saucepan, combine the huckleberries, granulated sugar, and water.
- 2
Heat the mixture over medium heat, stirring occasionally until the sugar dissolves and the huckleberries start to break down, about 10 minutes.
- 3
Once the mixture is simmering, reduce the heat to low and let it cook for an additional 10 minutes.
- 4
Remove from heat and let the syrup cool. Strain through a fine mesh sieve to remove the solids and store the syrup in a container in the refrigerator.
Drink Assembly
- 5
Assemble the Zero Proof Idaho Mule
In a large glass, fill it with ice cubes.
- 6
Pour the huckleberry syrup over the ice, followed by the fresh lime juice.
- 7
Top off the glass with ginger beer, gently stirring to combine the ingredients.
- 8
Garnish with fresh huckleberries and a lime wedge on the rim of the glass.
