Preparing the Wagyu Steak

    Marinate the Steak

    In a bowl, whisk together the olive oil, lime juice, garlic powder, cumin, chili powder, salt, and black pepper. Add the Wagyu steak, ensuring it is well coated in the marinade. Cover and refrigerate for at least 1 hour (up to 4 hours for better flavor).

    Cook the Steak

    Preheat a grill or skillet over high heat. Remove the steak from the marinade and discard any excess marinade. Cook the steak for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Once cooked, let the steak rest for 5 minutes before slicing.

Assembling the Tacos

    Warm the Tortillas

    In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable. Keep them covered with a clean towel to stay warm.

    Slice the Steak

    After resting, slice the Wagyu steak against the grain into thin strips.

    Build the Tacos

    On each warmed tortilla, place a few slices of Wagyu steak. Top with fresh cilantro, a generous spoonful of Paola's pico de gallo, and crumbled feta cheese. Offer red and tomatillo salsa on the side for dipping.
