Wagyu Smash Burger Recipe
Two house-seasoned, hand smashed Wagyu patties with grilled onions, lettuce, tomatoes, and melted American cheese on a Tuscan roll with special bun sauce.

Patty Preparation

Mix and Form Patties
In a bowl, mix the Wagyu beef with kosher salt and black pepper. Divide the beef into two equal portions and form them into loosely packed balls.

Cooking Burgers

Smash the Patties
Place the beef balls on the hot grill. Using a heavy spatula, press down firmly to smash the patties to about 1/2 inch thickness. Cook for about 3-4 minutes.

Flip and Add Cheese
Carefully flip the patties and place a slice of American cheese on each. Cook for another 2-3 minutes until the cheese is melted and the burgers are cooked to your desired doneness.
Assemble the Burger

Prepare the Bun Sauce
In a small bowl, mix together the mayonnaise, ketchup, and Dijon mustard to create the special bun sauce.

Toast the Rolls
Cut the Tuscan rolls in half and toast them lightly on the grill until golden brown.

Build the Burger
Spread the special bun sauce on the bottom half of each toasted roll. Place the cooked burger patty with melted cheese on top, followed by grilled onions, lettuce, tomato slices, and pickles. Top with the other half of the roll.
