    In a mixing bowl, gently combine the Wagyu beef with salt and black pepper. Form the mixture into one large patty.

    Heat a grill or skillet over medium-high heat. Cook the patty for about 4-5 minutes on each side, or until it reaches your desired level of doneness.

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the water. Cook for about 3-4 minutes for soft poached eggs, then remove with a slotted spoon.
