    In a mixing bowl, crack the eggs and whisk them together until well combined. Add salt and black pepper to taste.

    In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Pour in the egg mixture and cook for 2-3 minutes until the edges start to set.

    Add Fillings

    Sprinkle the chopped spinach, parsley, and shredded cheddar cheese over half of the omelet. Allow to cook for another minute until the cheese begins to melt.

    Fold and Serve

    Using a spatula, carefully fold the omelet in half over the filling. Cook for another minute, then slide it onto a plate and keep warm.

    Prepare the Potatoes

    Dice the potatoes, onion, and bell pepper into small, even pieces.

    In a large skillet, heat the olive oil over medium heat. Add the diced potatoes, onion, and bell pepper. Season with salt, black pepper, and paprika.

    Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden brown and tender.
