Adding Garlic and Spices
Stir in the minced garlic and cook for an additional minute until fragrant. Add the salt, black pepper, dried thyme, and bay leaf, stirring to combine.

Adding Broth and Tomatoes
Pour in the vegetable broth and add the canned diced tomatoes (with their juice). Bring the mixture to a gentle boil.

Simmering the Soup
Reduce heat to low, cover, and let the soup simmer for 20-25 minutes to allow flavors to meld. If using, add shredded chicken, spinach, or chickpeas during the last 5 minutes of simmering.

Final Seasoning
Taste the soup and adjust seasoning if necessary. Remove the bay leaf before serving.

Preparing the Bread
While the soup is simmering, preheat the oven to 375°F (190°C).

Making Pesto Toast
Spread 1 tablespoon of pesto on each slice of sourdough bread. Place the slices on a baking sheet.

Butter and Season
In a small bowl, mix softened butter with garlic powder. Spread the garlic butter mixture on the other side of the bread slices.

Toasting the Bread
Bake in the preheated oven for 10-12 minutes or until the bread is golden and crispy. Remove from oven and let cool slightly before serving.
