Prepare the Quesadilla Filling
In a large bowl, combine the sautéed red onion, cheddar jack cheese, and green chilis. Mix well to ensure even distribution of ingredients.

Assemble the Quesadillas
Lay one chipotle tortilla flat on a clean surface. Spoon a generous amount of the filling mixture onto half of the tortilla, then fold the other half over to create a half-moon shape. Repeat with the remaining tortillas and filling.

Cook the Quesadillas
In the same skillet used for the onions, add a little more oil if necessary and heat over medium-high heat. Place the folded quesadilla in the skillet and cook for 3-4 minutes on each side, or until golden brown and the cheese is melted. Remove from the skillet and let cool slightly before cutting into wedges.
Chipotle Aioli Preparation

Mix the Aioli Ingredients
In a small mixing bowl, combine the mayonnaise, chipotle peppers in adobo sauce, lime juice, garlic powder, and salt. Use a whisk or fork to blend until smooth and creamy. Adjust salt to taste.

Serve the quesadilla wedges hot with a side of the chipotle aioli for dipping.
