Omelet Preparation

    Prepare the Filling

    In a skillet over medium heat, cook the bacon until crispy. Remove and chop into small pieces. In the same skillet, add the spinach and cook until wilted. Add the mushrooms and diced green chilis, cooking until mushrooms are tender. Stir in the bacon and set aside.

    Whisk the Eggs

    In a mixing bowl, whisk the eggs until fully combined and slightly frothy. Season with salt and pepper.

    Cook the Omelet

    In a non-stick pan over medium-low heat, pour in the eggs, tilting the pan to spread evenly. Cook until the edges begin to set, then add the filling mixture and cheddar cheese on one half of the omelet. Carefully fold the omelet in half and cook for another minute until the cheese melts.

    Make the Hollandaise Sauce

    In a heatproof bowl, whisk together the egg yolks and lemon juice. Place over a pot of simmering water, whisking continuously until the mixture thickens. Slowly drizzle in the melted butter while whisking until fully combined. Season with salt and cayenne pepper.

    Prepare the Home Fries

    Dice the potatoes into small cubes. In a skillet, heat olive oil over medium heat. Add the potatoes, garlic powder, onion powder, salt, and black pepper. Cook, stirring occasionally, until golden brown and crispy, about 15-20 minutes.

Assembly and Garnish

    Plate the Dish

    Place the cooked omelet on a plate. Drizzle with the house hollandaise. Slice the avocado and arrange on top of the omelet. Sprinkle with paprika and black pepper. Serve alongside the seasoned home fries and garnish with fresh cilantro.
