Chicken Preparation

Heat olive oil in a skillet over medium-high heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Grill for about 6-7 minutes on each side until cooked through and golden brown. Remove and set aside.

Melt the Cheese
Place the grilled chicken breasts back in the skillet with the sautéed vegetables. Top each chicken breast with equal parts of cheddar and Swiss cheese. Cover the skillet and let the cheese melt for about 3-4 minutes.

Make the Gravy
In a saucepan, combine the brown gravy mix with water. Bring to a boil, then reduce heat and simmer until thickened according to package instructions.

Steam or boil the seasonal vegetables until tender, about 5-7 minutes. Drain and season with salt and pepper to taste.
