Chicken Preparation

    Cook the Chicken

    Heat olive oil in a skillet over medium-high heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Grill for about 6-7 minutes on each side until cooked through and golden brown. Remove and set aside.

Vegetable Topping Preparation

    Sauté the Vegetables

    In the same skillet, add butter. Once melted, add sliced bell peppers, sliced onion, and sliced mushrooms. Sauté for about 5-6 minutes until the vegetables are tender. Add minced garlic and cook for another minute.

Cheese Topping

    Melt the Cheese

    Place the grilled chicken breasts back in the skillet with the sautéed vegetables. Top each chicken breast with equal parts of cheddar and Swiss cheese. Cover the skillet and let the cheese melt for about 3-4 minutes.

Mashed Potatoes

    Prepare the Mashed Potatoes

    Peel and cube the potatoes. Boil them in salted water until fork-tender, about 15-20 minutes. Drain the potatoes and return them to the pot. Add milk, butter, salt, and pepper. Mash until smooth and creamy.

    Make the Gravy

    In a saucepan, combine the brown gravy mix with water. Bring to a boil, then reduce heat and simmer until thickened according to package instructions.

Seasonal Vegetables Preparation

    Cook the Seasonal Vegetables

    Steam or boil the seasonal vegetables until tender, about 5-7 minutes. Drain and season with salt and pepper to taste.
