Preparation of Vegetables

    Prepare the Portobello Mushrooms

    Clean the portobello mushrooms with a damp cloth to remove any dirt. Remove the stems and brush both sides with olive oil. Season with salt and black pepper.

    Roast the Red Bell Pepper

    Char the red bell pepper over an open flame or under a broiler until the skin is blistered and blackened. Place in a bowl, cover with plastic wrap, and let steam for 10 minutes. After steaming, peel off the charred skin and slice the pepper.

    Sauté the Onions

    Slice the onion into thin rings. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and sauté until they are caramelized and golden, about 8-10 minutes.

    Slice the Tomato

    Cut the tomato into thin slices and set aside.

Cooking the Mushrooms

    Grill the Portobello Mushrooms

    Preheat a grill or grill pan over medium-high heat. Grill the portobello mushrooms for about 5-7 minutes on each side, or until they are tender and have nice grill marks.

Assembling the Sandwich

    Assemble the Sandwich

    Spread 2 tablespoons of dill spread on the inside of each bread roll. Place the grilled portobello mushroom on the bottom half of the roll. Top with a slice of Swiss cheese, sautéed onions, roasted red pepper slices, and fresh tomato slices. Cap with the top half of the roll.
