Method

Haddock Preparation

    Prepare the Batter

    In a mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Gradually add the beer while whisking until the batter is smooth and free of lumps.

    Heat the Oil

    In a deep pan or fryer, heat vegetable oil to 350°F (175°C) over medium-high heat.

    Batter the Haddock

    Dip each haddock fillet into the batter, allowing excess batter to drip off.

    Fry the Haddock

    Carefully place the battered haddock into the hot oil and fry for about 4-5 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

Waffle Fries Preparation

    Cook the Waffle Fries

    In a separate pot or deep fryer, fry the frozen waffle fries according to package instructions until they are golden brown and crispy. Season with salt to taste.

Cabbage Salsa Preparation

    In a bowl, combine shredded cabbage, chopped red onion, diced tomato, chopped cilantro, lime juice, and salt. Toss until well mixed.

Tartar Sauce Preparation

    In a bowl, mix together mayonnaise, chopped dill pickles, lemon juice, capers, and salt. Stir until well combined.

Cocktail Sauce Preparation

    Make the Cocktail Sauce

    In a bowl, combine ketchup, prepared horseradish, lemon juice, and hot sauce. Mix well until smooth.
