Make the Chipotle Aioli
In a small bowl, combine mayonnaise, chopped chipotle peppers, and lime juice. Stir until smooth and set aside.

Prepare the Pickled Onions and Jalapenos
If using store-bought pickled onions and jalapenos, measure and set aside. If making homemade, ensure they are prepared ahead of time.
Frying the Haddock

Prepare the Batter
In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold water, mixing until a smooth batter forms.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Haddock
Dip each haddock fillet into the batter, allowing excess to drip off. Carefully place the battered fillets into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
Assembling the Tacos

Warm the Tortillas
In a dry skillet, lightly warm the corn tortillas for about 30 seconds on each side to make them pliable.

Build the Tacos
Place a piece of fried haddock in each tortilla. Top with cheddar jack cheese, cabbage salsa, pickled red onion, pickled jalapenos, and a drizzle of chipotle aioli.

Garnish with additional cilantro if desired. Serve immediately and enjoy your fried haddock tacos!
