Method

Preparing the Fish

  1. 1

    Season the Cod

In a small bowl, combine the Cajun seasoning with olive oil to create a paste. Rub this mixture all over the cod fillets.

  2. 2

    Grill the Cod

Preheat your grill or grill pan to medium-high heat. Grill the seasoned cod fillets for about 3-5 minutes on each side, or until the fish flakes easily with a fork. Remove from heat and let it rest.

  3. 3

    Prepare the Tortillas

While the fish is resting, warm the corn tortillas on the grill or in a skillet for about 30 seconds on each side, until pliable.

Making the Cabbage Salsa

  1. 4

    Chop Ingredients

Finely chop the green cabbage and red onion. Roughly chop the fresh cilantro.

  2. 5

    Mix Salsa

In a large bowl, combine the chopped cabbage, red onion, and cilantro. Add lime juice, salt, and black pepper. Toss well to combine all ingredients.

Assembling Tacos

  1. 6

    Assemble the Tacos

Break the grilled cod into large chunks and place them in the warmed tortillas. Top each taco with a generous amount of cabbage salsa.

  2. 7

    Serve

Serve the tacos immediately with lime wedges on the side for extra flavor.
