Steak Preparation

    Bread the Steak

    Start by seasoning the sirloin steak with salt and black pepper on both sides. Set up a breading station with three shallow bowls: one with all-purpose flour, one with beaten eggs mixed with milk, and one with breadcrumbs.

    Fry the Steak

    Dredge the seasoned steak in flour, then dip it into the egg mixture, and finally coat it with breadcrumbs. Heat vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the breaded steak and fry until golden brown, about 4-5 minutes on each side. Remove from skillet and drain on paper towels.

Gravy Preparation

    Cook the Sausage

    In the same skillet used for the steak, remove excess oil leaving about 1-2 tablespoons. Add the breakfast sausage and cook over medium heat until browned and crumbled.

    Make the Gravy

    Sprinkle the flour over the cooked sausage and stir to combine. Gradually add in the milk while stirring continuously to avoid lumps. Add diced green chilies, salt, and black pepper. Cook until the gravy thickens, about 3-5 minutes.

Mashed Potatoes Preparation

    Cook the Potatoes

    In a large pot, add the peeled and cubed potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes

    Add butter, milk, salt, and black pepper to the drained potatoes. Use a potato masher or a hand mixer to mash until smooth and creamy.

Vegetable Preparation

    Sauté the Vegetables

    In a separate skillet, heat olive oil over medium heat. Add the mixed seasonal vegetables, season with salt and black pepper, and sauté until tender, about 5-7 minutes.
