Chicken Fritters

    Prepare Chicken

    Cut chicken breasts into small, bite-sized pieces and place them in a bowl.

    Marinate

    Pour buttermilk over the chicken and marinate in the refrigerator for at least 1 hour, or overnight for best results.

    Prepare Breading

    In a separate bowl, combine flour, cornstarch, paprika, garlic powder, salt, and black pepper.

    Heat Oil

    In a deep skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Bread Chicken

    Remove chicken from buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring it’s well coated.

    Fry Chicken

    Carefully place the breaded chicken pieces in the hot oil, frying until golden brown and cooked through, about 5-7 minutes. Drain on paper towels.

    Cook Sausage

    In a saucepan over medium heat, cook sausage until browned, breaking it into small pieces.

    Sprinkle flour over the sausage and cook for 1-2 minutes, stirring constantly to create a roux.

    Add Milk and Chilies

    Gradually whisk in milk, ensuring no lumps form. Stir in green chilies, salt, and black pepper. Simmer until thickened, about 5 minutes.

Mashed Potatoes

    Boil Potatoes

    Peel and chop potatoes into quarters. Place in a pot of salted boiling water and cook until tender, about 15-20 minutes.

    Drain and return potatoes to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.

    Chop broccoli and carrots into bite-sized pieces.
