Flash fried cheddar and green chili stuffed avocado served on a bed of chili seasoned spinach. Topped with tomatillo salsa, two poached eggs, avocado and hollandaise. Served with house seasoned home fries.

Prepare Avocados
Cut the avocados in half, remove the pit, and scoop out a bit of the flesh to create space for the filling.

Make Filling
In a bowl, mix together the shredded cheddar cheese, diced green chilies, salt, and black pepper.

Stuff Avocados
Fill each avocado half with the cheese and chili mixture. Ensure they are well-packed.

Flash Fry Avocados
In a frying pan, heat olive oil over medium heat. Carefully place the stuffed avocados in the pan and fry for 2-3 minutes on each side until golden brown.

Sauté Spinach
In another pan, add a tablespoon of olive oil over medium heat. Add the spinach and season with salt and black pepper. Sauté until wilted, about 2-3 minutes.

Poach Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the simmering water. Poach for about 3-4 minutes or until the whites are set but yolks remain runny.

Prepare Potatoes
Dice the potatoes into uniform cubes. Rinse them under cold water to remove excess starch.

In a large bowl, toss the diced potatoes with olive oil, paprika, garlic powder, onion powder, salt, and black pepper until evenly coated.
