    Grill the Zucchini

    Preheat the grill to medium-high heat. Slice the zucchini into thin rounds. Brush the zucchini slices with olive oil and season with salt and black pepper. Grill the zucchini for about 2-3 minutes on each side until tender and grill marks appear. Remove from the grill and let cool.

    Prepare the Tomato Bruschetta

    Dice the tomatoes and place them in a bowl. Drizzle with olive oil, and season with salt and black pepper. Mix well and set aside.

    Assemble the Carpaccio

    On a large serving plate, arrange the grilled zucchini slices in an overlapping pattern. Top with the tomato bruschetta mixture, followed by a generous handful of arugula.

    Finish with Cheese and Balsamic Glaze

    Shave the Asiago cheese over the top of the assembled zucchini and bruschetta. Drizzle balsamic glaze over the dish to taste.
