Prepare the Dough
In a bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until foamy. In a large mixing bowl, combine Italian 00 flour and salt. Add the yeast mixture and olive oil. Mix until the dough comes together, then knead for about 10 minutes until smooth. Let it rise in a warm place for 1 hour.

Preheat the Oven
Preheat your wood fire oven to around 800°F (427°C).

Shape the Pizza
Once the dough has risen, divide it into two equal portions. Roll out each portion on a floured surface to your desired thickness, making a round shape.

Assemble the Pizza
Spread a thin layer of tomato sauce over the base. Tear pieces of Fior di Latte cheese and distribute them evenly on top. Add fresh basil leaves.

Bake the Pizza
Carefully place the pizza in the preheated wood fire oven. Bake for about 90 seconds to 2 minutes, rotating occasionally, until the crust is golden and the cheese is bubbling.

Remove the pizza from the oven, garnish with extra basil if desired, slice, and serve hot.
