    Clean the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any dirt or debris. Discard any mussels that are open or have broken shells.

    Prepare the Sauce

    In a large wok or deep skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

Cooking

    Add Sauce

    If using Thai curry, stir in the red curry paste and coconut milk. If using white wine garlic, pour in the white wine and bring to a simmer.

    Cook the Mussels

    Add the cleaned mussels to the wok and cover. Cook for about 5-7 minutes, or until the mussels have opened. Discard any mussels that do not open.

    Finishing Touches

    Stir in the lime juice, chopped cilantro, salt, and pepper. Mix well and let simmer for another minute.

Serving

    Serve Hot

    Serve the mussels in a bowl with the sauce poured over them. Enjoy with crusty bread or over rice.
