1. Prepare Coconut Jasmine Rice

Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice, coconut milk, and 1 cup of water. Bring to a boil, then reduce to low heat, cover, and simmer for about 15-20 minutes until the rice is cooked and fluffy. Remove from heat and let it sit for 5 minutes.

2. Crispy Tofu

Press the tofu to remove excess moisture, then cut it into cubes. In a skillet, heat olive oil over medium-high heat. Add the tofu cubes and cook until golden and crispy on all sides, about 10-12 minutes. Drizzle with soy sauce and toss to coat.

3. Prepare Vegetables

Thinly slice the avocado, radishes, and cucumber. Grate or julienne the carrot. Set aside.

4. Prepare Wontons

Preheat the oven to 375°F (190°C). Cut wonton wrappers into triangles and place them on a baking sheet. Lightly brush with olive oil and bake for 8-10 minutes until crispy and golden.

5. Assemble the Poke Bowl

In a bowl, place a scoop of coconut jasmine rice as the base. Top with crispy tofu, edamame, avocado slices, grated carrots, sliced radishes, cucumber, and lettuce. Drizzle with wasabi mayo and sprinkle sesame seeds on top. Add crispy wontons on the side or on top for crunch.
