Preparation

  1. 1

    Chop the Vegetables

Finely chop the onion, garlic, carrot, and celery. Slice the mushrooms.

Cooking

  1. 2

    Sauté the Vegetables

In a large pot, heat a tablespoon of truffle oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté until softened, about 5 minutes.

  2. 3

    Add the Mushrooms

Stir in the sliced mushrooms and continue to cook until they are tender and have released their moisture, about 8-10 minutes.

  3. 4

    Simmer the Soup

Pour in the vegetable broth and add the thyme. Bring to a boil, then reduce heat and let simmer for 15 minutes.

  4. 5

    Blend the Soup

Using an immersion blender, blend the soup until smooth. Alternatively, transfer to a blender in batches.

  5. 6

    Add Cream and Season

Stir in the heavy cream and the remaining tablespoon of truffle oil. Season with salt and black pepper to taste.

  6. 7

    Serve

Ladle the soup into bowls and garnish with fresh parsley.
