Chipotle Aioli

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to create fries.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Remove the fries from the water, pat them dry with a towel, and fry them in batches until golden brown (about 4-5 minutes per batch).

Season and Add Truffle
Remove the fries from the oil and drain on paper towels. While still hot, sprinkle with salt and drizzle with truffle oil. Toss to coat.

Add Parmesan
Immediately sprinkle the grated Parmesan cheese over the hot fries and toss gently to combine.
Chipotle Aioli

Combine Ingredients
In a small bowl, combine the mayonnaise, chopped chipotle peppers, lime juice, minced garlic, and salt.

Mix Well
Stir well until all ingredients are fully incorporated. Adjust the salt to taste.

Chill
Cover and refrigerate for at least 30 minutes to allow flavors to meld.
