Preparation of Chicken
Cut the chicken breast into bite-sized pieces and coat them evenly with cornstarch.

Flash-Frying the Chicken
In a large pot or deep fryer, heat the vegetable oil to 180°C (350°F). Carefully add the coated chicken pieces in batches and fry for 5-7 minutes until golden brown and cooked through. Remove and drain on paper towels.

Sautéing Vegetables
In a large pan, add a bit of the remaining oil and sauté chopped green onions and bean sprouts over medium heat for about 2-3 minutes until they are slightly tender.

Combining Ingredients
Add the fried chicken to the pan with the sautéed vegetables and toss together gently. Sprinkle sesame seeds on top and mix to combine.

Serving
Serve hot, garnished with additional green onions and sesame seeds if desired.
