Method
Crust Preparation
- 1
Make the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Press the mixture firmly into the bottom and sides of a 9-inch pie dish. Bake for 10 minutes, then remove from the oven and let it cool.
Lemon Filling Preparation
- 2
Prepare the Lemon Filling
In a medium bowl, whisk together the fresh lemon juice, lemon zest, sweetened condensed milk, and eggs until smooth. Pour the mixture into the cooled crust.
- 3
Bake the Pie
Bake the pie in the oven at 350°F (175°C) for 15-20 minutes, or until the filling is set and slightly puffed. Remove from the oven and let it cool to room temperature.
Fruit Coulis Preparation
- 4
Make the Fruit Coulis
In a small saucepan, combine the strawberries, raspberries, granulated sugar, and water. Cook over medium heat until the fruit softens, about 10 minutes. Remove from heat and blend until smooth. Strain the mixture through a fine-mesh sieve to remove seeds, if desired. Allow to cool.
Serving
- 5
Serve the Pie
Once the pie is completely cooled, slice and serve with the fruit coulis drizzled on top.
