Latkes Preparation

    Prepare the Potatoes and Onion

    Grate the russet potatoes and onion using a box grater or food processor. Place the grated mixture in a clean kitchen towel and squeeze out excess moisture.

    Mix Ingredients

    In a bowl, combine the grated potatoes, onion, egg, flour, salt, and black pepper. Mix well until fully combined.

    Fry the Latkes

    Heat vegetable oil in a large skillet over medium heat. Scoop spoonfuls of the mixture and flatten them into patties. Fry each latke for about 4-5 minutes on each side until golden brown. Remove and drain on paper towels.

Hollandaise Sauce Preparation

    Melt the Butter

    In a small saucepan, melt the butter over low heat. Keep warm.

    Whisk the Egg Yolks

    In a heatproof bowl, whisk the egg yolks with lemon juice until pale and slightly thickened.

    Combine and Whisk

    Place the bowl over a pot of simmering water (double boiler). Gradually add the melted butter while whisking continuously until the sauce thickens. Season with salt and cayenne pepper.

    Prepare the Salad

    In a bowl, combine fresh spinach and halved cherry tomatoes. Drizzle with olive oil and balsamic vinegar. Season with salt and black pepper. Toss gently to mix.

Assembly

    Plate the Dish

    On a plate, place 2-3 latkes, top with slices of smoked steelhead salmon, and drizzle with hollandaise sauce. Serve alongside the spinach and tomato salad.
