    Prepare the Potato Latkes

    Cook the potato latkes according to your recipe or package instructions until crispy. Set aside.

    Prepare the Avocado and Onion

    Slice the avocado and red onion thinly. Set aside.

    Prepare the Hollandaise Sauce

    In a double boiler, whisk together the egg yolks and lemon juice until pale and thick. Gradually whisk in melted butter until the sauce is thickened. Season with salt and cayenne pepper. Keep warm.

Cooking the Eggs

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide into the water. Poach for 3-4 minutes until whites are set but yolks remain runny. Remove and drain on paper towels.

Assembly

    Assemble the Benedict

    On each potato latke, layer slices of avocado, smoked salmon, and red onion. Top with a poached egg and drizzle generously with hollandaise sauce. Garnish with capers and additional seasoning if desired.
