Preparation

    Prepare the Soy Mustard Sauce

    In a small bowl, whisk together the Dijon mustard, soy sauce, honey, and sesame oil until smooth. Set aside.

    Prepare the Albacore

    Pat the albacore tuna steaks dry with paper towels. Brush each steak lightly with soy sauce.

    Coat with Sesame Seeds

    Spread the sesame seeds on a flat surface and press each tuna steak into the seeds until fully coated.

Cooking

    Sear the Tuna

    In a skillet over medium-high heat, add a small amount of oil. Once hot, sear the tuna steaks for 1-2 minutes on each side, or until the sesame seeds are golden and the tuna is cooked to your liking (rare to medium-rare is recommended).

Plating

    Serve

    Slice the seared albacore tuna into strips and arrange them on a plate. Serve with a side of seaweed salad and a dollop of tobiko. Drizzle with the soy mustard sauce.
