Seafood Linguine Carbonara

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Prepare the Seafood

    In a large skillet, heat olive oil over medium heat. Add the chopped bacon and cook until crispy. Add the minced garlic and cook for 1 minute until fragrant.

    Add Seafood

    Add the prawns, snapper, and scallops to the skillet. Cook for about 3-5 minutes, until the prawns are pink and the fish is cooked through. Remove from heat and set aside.

    Make the Sauce

    In a bowl, whisk together the egg yolks, heavy cream, and grated Parmesan cheese until well combined. Season with salt and black pepper to taste.

    Combine Everything

    Return the skillet to low heat. Add the drained linguine to the skillet with the seafood. Pour the egg mixture over the pasta, stirring quickly to combine and create a creamy sauce. If needed, add reserved pasta water to reach desired consistency.

    Serve

    Garnish with chopped fresh parsley and additional Parmesan cheese if desired. Serve immediately.
