Method
Preparing the Sablefish

Make the Marinade
In a bowl, whisk together the miso paste, sake, mirin, brown sugar, and sesame oil until smooth.

Marinate the Fish
Place the sablefish fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 1 hour, preferably overnight.

Roast the Fish
Preheat the oven to 400°F (200°C). Remove the fish from the marinade and place it on a lined baking sheet. Roast for 12-15 minutes or until the fish is cooked through and flakes easily with a fork.

Stir-Fry Aromatics
Add the minced garlic and stir-fry for about 30 seconds until fragrant.

Add Rice and Vegetables
Add the cooked rice, soy sauce, and frozen peas and carrots. Stir well and cook for 3-4 minutes until heated through.

Add Eggs
Push the rice to one side of the wok, pour in the beaten eggs, and scramble until just set. Mix everything together and add sliced green onions.
