Method

Cooking the Mussels

    Prepare the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any dirt or sand. Discard any that are open or broken.

    Make the Curry Sauce

    In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant. Stir in the curry paste and cook for another minute.

    Add Coconut Milk and Mussels

    Pour in the coconut milk and bring to a gentle simmer. Add the cleaned mussels, cover the pot, and cook for 5-7 minutes, or until the mussels have opened. Discard any that remain closed.

    Finish the Sauce

    Stir in the lime juice, chopped cilantro, and season with salt and pepper to taste. Remove from heat.

Preparing the Frites

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Prepare the Fries

    In a bowl, toss the cut potatoes with olive oil and salt until evenly coated.

    Bake the Frites

    Spread the potatoes in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.

    Garnish

    Remove from the oven and sprinkle with chopped parsley before serving.
