Pasta Preparation
- 1
Cook the Tagliatelle
Bring a large pot of salted water to a boil. Cook the tagliatelle according to package instructions until al dente. Drain and set aside, reserving some pasta water.
Sauce Preparation
- 2
Sauté the Mushrooms
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add foraged mushrooms and cook until they release their moisture and become tender, about 5-7 minutes.
- 3
Make the Cream Sauce
Lower the heat and pour in the heavy cream. Stir in the truffle oil, salt, and black pepper. Allow to simmer for 3-5 minutes until slightly thickened.
- 4
Combine Pasta and Sauce
Add the cooked tagliatelle to the skillet, tossing to coat the pasta in the sauce. If the sauce is too thick, add a bit of reserved pasta water to reach the desired consistency.
Serving
- 5
Plate and Garnish
Divide the pasta among serving plates. Top with shaved Parmesan cheese and sprinkle with fresh parsley before serving.
