Preparation of Miso Glaze

    Make the Miso Glaze

    In a small bowl, combine miso paste, mirin, soy sauce, and sugar. Whisk until smooth and well blended.

Prepare the Vegetables

    Roast the Fingerling Potatoes and Vegetables

    Preheat the oven to 400°F (200°C). Cut fingerling potatoes in half lengthwise and place them on a baking sheet. Cut carrots, zucchini, and bell pepper into bite-sized pieces. Add all vegetables to the baking sheet, drizzle with olive oil, and season with salt and black pepper. Toss to coat evenly.

    Roast the Vegetables

    Put the baking sheet in the oven and roast for about 25-30 minutes or until the potatoes are golden and tender.

    Prepare the Sablefish

    While the vegetables are roasting, preheat a pan over medium-high heat. Brush the sablefish fillets with the miso glaze on both sides.

    Cook the Sablefish

    Once the pan is hot, place the sablefish in the pan and sear for about 3-4 minutes on each side until the fish is cooked through and has a nice caramelized exterior.

Serving

    Plate the Dish

    Remove the vegetables from the oven and arrange them on plates. Place the miso-glazed sablefish on top of the vegetables and drizzle any remaining glaze over the fish.
