Preparation

    Prepare the vegetables

    Preheat the oven to 400°F (200°C). Wash and slice the fingerling potatoes in half. Peel and cut the carrots into sticks. Rinse the broccolini and set aside.

    Blister the cherry tomatoes

    In a pan over medium-high heat, add a drizzle of olive oil and the cherry tomatoes. Cook, shaking the pan occasionally, until the tomatoes are blistered, about 5-7 minutes. Remove and set aside.

    Roast the vegetables

    On a baking sheet, toss the fingerling potatoes, carrots, and broccolini with olive oil, salt, and pepper. Roast in the preheated oven for about 20-25 minutes, or until tender.

    Cook the halibut

    Season the halibut fillets with salt and pepper. In a skillet over medium heat, melt 2 tablespoons of butter. Add the fillets and cook for about 4-5 minutes per side, or until cooked through and flaky.

Finishing Touches

    Prepare the lemon butter sauce

    In the same skillet used for the halibut, add the remaining butter, honey, and lemon juice. Stir until melted and combined, then add the sun-dried tomatoes.

    Plate the roasted vegetables, top with the halibut, and drizzle with the lemon butter sauce. Garnish with blistered cherry tomatoes and a sprinkle of parmesan.
