Preparing the Coleslaw

    Make the Coleslaw

    In a large bowl, combine shredded cabbage and grated carrots. In a separate small bowl, mix mayonnaise, apple cider vinegar, sugar, salt, and pepper. Pour the dressing over the cabbage mixture and toss to coat. Refrigerate for at least 30 minutes before serving.

Preparing the Tartar Sauce

    Make the Tartar Sauce

    In a bowl, mix together mayonnaise, chopped dill pickles, lemon juice, chopped capers, salt, and pepper until well combined. Refrigerate until ready to serve.

Cooking the Fish and Chips

    Prepare the Potatoes

    Peel and cut the potatoes into thick fries. Rinse them in cold water and pat dry with a towel.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

    In a bowl, whisk together flour, cornstarch, baking powder, salt, pepper, and cold sparkling water until smooth.

    Cook the Cod

    Dip cod fillets into the batter, allowing excess to drip off. Carefully place them in the hot oil and fry until golden brown, about 4-5 minutes. Remove and drain on paper towels.
