Preparing the Ham

    In a large pot, combine water, onion (quartered), garlic (smashed), bay leaves, black peppercorns, carrot (chopped), and celery (chopped). Bring to a boil.

    Once the brine is boiling, add the Kassler ham. Reduce heat to a simmer and cover. Cook for about 1 hour, or until the internal temperature reaches 70°C (160°F).

Glazing the Ham

    Prepare the Glaze

    In a small bowl, mix brown sugar, honey, Dijon mustard, and apple cider vinegar until well combined.

    Glaze the Ham

    Preheat the oven to 180°C (350°F). Remove the ham from the pot and place it on a baking tray. Brush the glaze over the ham.
