Cooking the Chicken

    Prepare the Chicken

    Preheat the oven to 400°F (200°C). Season the chicken thighs with salt and black pepper. Heat olive oil in a large oven-safe skillet over medium-high heat, then add the chicken skin-side down. Sear until golden brown, about 5 minutes.

    Bake the Chicken

    Flip the chicken and transfer the skillet to the oven. Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).

Making the Demi-Glace

    Sauté the Aromatics

    In the same skillet used for the chicken, add shallots and garlic. Sauté until fragrant, about 2 minutes.

    Add the Mushrooms

    Add the wild mushrooms and cook until they begin to soften, about 5 minutes. Pour in the red wine and scrape the bottom of the skillet to deglaze.

    Simmer the Sauce

    Add chicken stock and thyme. Bring to a boil, then reduce heat and let simmer until the sauce thickens, about 15-20 minutes. Stir in butter before serving.

Preparing the Potatoes

    Roast the Potatoes

    Toss the halved baby potatoes with roasted garlic, lemon juice, parsley, olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for 25-30 minutes or until golden and crispy.

Cooking the Vegetables

    Sauté the Vegetables

    In a separate pan, heat olive oil over medium heat. Add the seasonal vegetables and sauté until tender, about 5-7 minutes. Season with salt and pepper.
