Method

Preparation

  1. 1

    Activate the Yeast

In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until foamy.

  2. 2

    Mix the Dough

In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture along with olive oil. Mix until a sticky dough forms.

  3. 3

    Knead the Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

  4. 4

    First Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.

Baking

  1. 5

    Prepare the Pan

Grease a baking sheet or a 9x13 inch pan with olive oil.

  2. 6

    Shape the Dough

Once risen, punch down the dough and transfer it to the prepared pan. Stretch it out to fit the pan, creating dimples with your fingers.

  3. 7

    Add Toppings

Drizzle the top with olive oil, sprinkle with coarse sea salt and fresh rosemary.

  4. 8

    Second Rise

Cover with a cloth and let it rise again for about 30 minutes.

  5. 9

    Bake

Preheat the oven to 425°F (220°C) and bake for 20-25 minutes or until golden brown.

  6. 10

    Cool and Serve

Allow the focaccia to cool slightly before slicing. Serve warm or at room temperature.
