Dumpling Preparation

    Make the Dough

    In a bowl, mix wheat starch, tapioca starch, and salt. Gradually add boiling water, mixing until a dough forms. Knead the dough on a floured surface until smooth. Cover with a damp towel and let it rest for 30 minutes.

    Prepare the Filling

    Chop the shrimp into small pieces and mix with pork fat, garlic, ginger, cornstarch, soy sauce, sesame oil, and white pepper in a bowl. Stir until well combined.

Dumpling Assembly

    Form the Dumplings

    Divide the dough into small balls (about 1 inch in diameter). Roll each ball into a thin circle. Place about 1 tablespoon of filling in the center of each circle. Fold the dough over the filling and pinch to seal.

Cooking

    Steam the Dumplings

    Prepare a steamer and steam the dumplings for about 6-8 minutes on high heat until translucent and cooked through.

Serving

    Serve with Sauce

    Serve the dumplings hot with hot mustard and chili sauce on the side for dipping.
