Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare the Chicken
Pat the chicken dry with paper towels, then rub olive oil, salt, pepper, and fresh thyme all over it. Squeeze lemon juice over the chicken and place the lemon halves inside the cavity.

Prepare the Potatoes
Cut the baby potatoes in half and toss them with olive oil, garlic powder, salt, and black pepper. Spread them on a baking sheet.

Roast the Chicken and Potatoes
Place the chicken on the baking sheet with the potatoes. Roast in the preheated oven for about 45 minutes.

Add the Broccolini
After 45 minutes, add the broccolini to the baking sheet and roast everything for an additional 10-15 minutes until the chicken is cooked through and the vegetables are tender.
Making the Pan Jus

Make the Pan Jus
In a small saucepan, combine chicken stock, fresh thyme, and lemon juice. Bring to a simmer. Mix cornstarch with water to create a slurry, then stir into the sauce until thickened.
