Cooking Fingerling Potatoes

    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash and scrub the fingerling potatoes thoroughly. Cut any larger potatoes in half lengthwise for even cooking.

    Season and Roast

    In a bowl, toss the fingerling potatoes with olive oil, salt, and black pepper. Spread them out in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until golden brown and tender, flipping halfway through.

Making Chimichurri Dressing

    Combine Ingredients

    In a bowl, mix together the fresh parsley, fresh oregano, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Stir until well combined.

    Rest the Dressing

    Let the chimichurri dressing sit for at least 15 minutes to allow flavors to meld before serving.
