Prepare the Fries

    Fry the Potatoes

    Heat olive oil in a deep fryer or large pot. Fry the cut potatoes until golden brown and crispy. Season with salt and pepper, then drain on paper towels.

Cook the Filet Mignon

    Sear the Steaks

    Preheat a skillet over medium-high heat. Rub the filet mignon steaks with olive oil, salt, and pepper. Sear for about 4-5 minutes on each side for medium-rare, or to your preferred doneness.

Prepare the Crab Topping

    Combine the Ingredients

    In a bowl, mix the fresh crab meat, lemon juice, and chopped parsley. Set aside.

Make the Béarnaise Sauce

    Prepare the Sauce

    In a saucepan, melt the butter over low heat. In a separate bowl, whisk together egg yolks, white wine vinegar, shallots, and a pinch of salt. Slowly whisk the melted butter into the egg yolk mixture until thickened. Stir in chopped tarragon and season with salt and pepper.

Assemble the Dish

    Plate the Filet Mignon

    Place each filet mignon on a plate. Top with crab mixture, drizzle with béarnaise sauce, and serve alongside fries and seasonal vegetables.
