Edamame Hummus

Grilled Garlic Baguette

Method

Edamame Hummus

    Prepare Edamame

    In a pot of boiling salted water, cook the edamame for 5 minutes until tender. Drain and cool.

    Blend Hummus

    In a food processor, combine edamame, tahini, garlic, lemon juice, olive oil, salt, cumin, and water. Blend until smooth. Adjust seasoning to taste.

Marinated Mixed Olives

    Mix Ingredients

    Combine mixed olives, olive oil, fresh herbs, sliced garlic, and red chili flakes in a bowl. Toss to coat.

    Marinate

    Let the olives marinate for at least 30 minutes at room temperature.

Crispy Chickpeas

    Prepare Chickpeas

    Preheat the oven to 400°F (200°C). Pat chickpeas dry with a towel.

    Roast Chickpeas

    Toss chickpeas with olive oil, salt, and paprika. Spread on a baking sheet and roast for 20-25 minutes until crispy.

Tomato Confit

    Prepare Tomatoes

    Preheat the oven to 300°F (150°C). Place cherry tomatoes in a baking dish.

    Roast Tomatoes

    Drizzle with olive oil, add garlic and salt. Roast for 1 hour until soft. Stir in fresh basil before serving.

Grilled Garlic Baguette

    Prepare Baguette

    Slice the baguette in half lengthwise. Brush with olive oil.

    Grill Baguette

    Grill the baguette halves, cut side down, for about 3-5 minutes until toasted. Rub with the halved garlic clove.
