    Cook the Bacon

    In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.

    Sauté the Vegetables

    Add butter to the pot with the bacon drippings. Once melted, add the onion and celery, sautéing until translucent, about 5 minutes.

    Add Flour

    Stir in the flour and cook for 2-3 minutes, ensuring there are no lumps.

    Add Liquids

    Gradually whisk in the clam juice. Add diced potatoes, thyme, bay leaf, and bring to a simmer. Cook for about 15 minutes, or until potatoes are tender.

    Add Clams and Cream

    Stir in the chopped clams and heavy cream. Season with salt and black pepper to taste. Simmer for an additional 5-10 minutes.

    Serve

    Remove the bay leaf. Ladle the chowder into bowls, garnish with crispy bacon and chopped parsley, and serve hot.
