Chocolate Truffle Cake Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.

    Combine Wet Ingredients

    In another bowl, whisk together eggs, milk, oil, and vanilla extract until well combined.

    Combine Mixtures

    Add the wet ingredients to the dry ingredients and mix until just combined. Stir in the boiling water until the batter is smooth.

    Bake the Cake

    Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

    Cool the Cakes

    Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Chocolate Ganache Preparation

    Heat the Cream

    In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.

    Melt the Chocolate

    Remove from heat and add the chocolate chips. Let sit for 5 minutes, then stir until smooth.

Raspberry Coulis Preparation

    Cook the Raspberries

    In a saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat until the raspberries break down and the mixture thickens, about 10-15 minutes.

    Blend and Strain

    Blend the mixture until smooth, then strain through a fine mesh sieve to remove seeds.

Assembly

    Assemble the Cake

    Once the cakes are cooled, place one layer on a serving plate. Spread a layer of ganache on top, then place the second layer on top and cover the entire cake with the remaining ganache.

    Drizzle the raspberry coulis on plates and serve slices of the chocolate truffle cake on top.
