Method

Prepare the Cajun Lingcod

    Season the Fish

    Rub the lingcod fillets with Cajun seasoning, salt, and black pepper.

    Cook the Fish

    In a skillet, heat olive oil over medium-high heat. Cook the seasoned lingcod for about 4-5 minutes on each side or until cooked through.

Make the Warm Potato Salad

    Boil the Potatoes

    In a pot of boiling salted water, cook the baby potatoes until tender, about 15-20 minutes. Drain and let cool slightly before halving.

    Mix the Salad

    In a large bowl, combine the halved potatoes, red onion, celery, parsley, Dijon mustard, apple cider vinegar, olive oil, salt, and black pepper. Toss gently to combine.

Prepare the Garden Vegetables

    In a skillet, heat olive oil over medium heat. Add zucchini, bell peppers, and carrots. Season with salt and black pepper. Sauté until just tender, about 5-7 minutes.

Make the Red Pepper Coulis

    In a blender, combine roasted red bell peppers, olive oil, minced garlic, balsamic vinegar, and salt. Blend until smooth.
