Tomato Preparation

    Marinate the Tomatoes

    In a bowl, combine the baby heirloom tomatoes, olive oil, balsamic vinegar, salt, and black pepper. Toss to coat the tomatoes evenly. Allow them to marinate for at least 30 minutes.

Salsa Verde Preparation

    Make the Salsa Verde

    In a food processor, combine the parsley, basil, garlic, capers, lemon juice, olive oil, and salt. Pulse until the mixture is well combined but still chunky. Adjust seasoning to taste.

Assembly

    Assemble the Dish

    On a serving platter, place the marinated tomatoes, torn burrata cheese, and a handful of arugula. Drizzle with salsa verde and balsamic glaze. Serve with grilled focaccia on the side.
