Preparing the Poke

    Marinate the Tuna

    In a bowl, combine diced Ahi tuna, soy sauce, sesame oil, and chopped green onions. Mix well and let marinate for at least 15 minutes.

Cooking the Rice

    Cook the Coconut Jasmine Rice

    Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and liquid is absorbed. Fluff with a fork.

Making the Wasabi Mayo

    Prepare Wasabi Mayo

    In a small bowl, mix together mayonnaise and wasabi paste until well combined. Adjust wasabi to taste.

Assembling the Bowl

    Assemble the Poke Bowl

    In bowls, add a generous scoop of coconut jasmine rice, top with marinated Ahi tuna, edamame, sliced avocado, shredded carrots, sliced radishes, sliced cucumbers, and lettuce. Drizzle with wasabi mayo and sprinkle crispy wontons on top.
