Method

Cooking the Tenderloin

    Prepare the Tenderloin

    Season the grass-fed tenderloin with salt and black pepper on all sides.

    Sear the Tenderloin

    In a skillet, heat olive oil over medium-high heat. Add the tenderloin and sear for about 3-4 minutes on each side, or until it reaches your desired doneness.

    Rest the Tenderloin

    Remove the tenderloin from the skillet and let it rest for 5 minutes before slicing.

Making the Fries

    Prepare Potatoes

    Cut the potatoes into fries and soak them in cold water for 30 minutes. Drain and pat dry.

    Bake the Fries

    Preheat the oven to 425°F (220°C). Toss the fries with olive oil and salt. Spread them out on a baking sheet and bake for 25-30 minutes, turning halfway, until crispy.

Roasting the Vegetables

    Preheat the oven to 425°F (220°C). Toss cherry tomatoes and broccolini with olive oil, salt, and black pepper.

    Spread the tomatoes and broccolini on a baking sheet. Roast for 15-20 minutes until tender and slightly charred.

    Add Parmesan

    Sprinkle parmesan cheese over the roasted vegetables and return to the oven for an additional 5 minutes.
